- 4 Lemons
- ½ cup sugar
- 3 cups water
- mint, for garnish
Remove the rind of one of the lemons and place it in a pan to boil with the water and sugar.
Let it boil for about 4 minutes, remove from heat and let it cool.
Once cool, remove the lemon rind and grate the skin of one of the remaining lemons and add it to the syrup.
Next, squeeze the juice of all the remaining lemons, mix it to the syrup, place the mixture in a freezable container and let it freeze.
Before serving, break a chunk off the main piece ( with the help of an ice pick or a knife, for example) and blend until it turns snowy.
Serve in a bowl immediately garnished with a few leaves of mint or as a filling for a brioche (See recipe for Brioche).
